2. Fresh whole milk ricotta (Calabro brand or other. Supermarket/generic ricotta is not recommended)
3. Eggs
4. Salt
5.Canned, whole peeled tomatoes (San Marzano or other)
6. Fresh mozzarella
7. Fresh basil
8. Garlic
9. Black pepper
10. Extra virgin olive oil
11. Large bowl
12. Fork
13. Bench scraper or knife
14. Large pot
15. Baking dish or oven safe pan
16. Wooden cutting board

Competition is in the nature of human beings. When we invented the car we finally had the perfect tool to push ourselves ‘over our limits’. The thirst for victory in these powerful machines; the desire to be ‘number one’, pushed men to show off their skills and courage, and then made them legends.
Italfoto Archive is a collection of 180,000 negatives, preserved in excellent condition, spanning from the early 50s up through the late 90s and containing many unique events and exciting moments in car racing from those years. While the opening, digitizing and cataloging of this unusual collection continues, revealing hundreds of amazing pictures every day, we at the Archive are proud to share with you some of our work to date. This show contains unique pieces capturing portraits of the racing car pilots, real pioneers and heroes, and their machines that wrote unforgettable pages in the history of the sport.
In this virtual exhibition are pictures from The Grand Prix of Valentino Park (1955) and The Grand Prix of Monaco (1958).

"What a delightful read! Melissa Dulebohn has written a wonderful account of Casa Colombo. It will bring back warm memories to anyone who has any association with the neighborhood. She chronicles the history of the building through the events and the people who passed through its doors. Her descriptions are vivid and well supported by the illustrations.

The Italian Educational & Cultural Center/Center for the Arts at Casa Colombo (IECC), a 501c3 not for profit organization, serves as a cultural multi-media link between the past and the future of the American and Italian communities of Jersey City. IECC has a two-fold mission: (1) To honor Casa Colombo's place in immigration history by maintaining its historic building and by displaying historical materials and artifacts, and interpreting them for a culturally diverse population in Jersey City and Hudson County, and (2) To foster the visual arts and humanities in the area through visual arts exhibits, performances, concerts, cultural, educational, and literary events, tours, and other programming.
